We seek a food and beverage manager who can deliver on the following:
- Preparing daily, weekly and end of month reports and any other statistical information as required.
- Responsible for the preparation of statistical performance and forecast on a weekly and/or monthly basis and to assist in the preparation for the F&B department.
- Assist in the preparations the Food and Beverage yearly budget.
- Prepare the daily reconciliation of the beverage sales and act whenever necessary.
- Ensure all daily F&B revenue is accounted for and posted correctly by cross checking the daily Food and Beverage revenue figures.
- Ensure the numbers of F&B covers are correctly accounted for and posted by cross checking the daily Food and Beverage figures.
- Maximize the Food and Beverage revenue by promoting up-selling in the restaurants and bars.
- Organize and co-ordinate promotional events in the restaurant and bars.
- Participate actively during the end of the month stock take of the beverages outlets.
- Maintain Standard Operating Procedures for the Food and Beverage departments.
- Ensure there is enough service stock to avoid any disturbance in the service delivery of the hotel.
- Responsible for the ordering of the beverages.
- Liaise with Accounts and Purchasing department and ensure there is no out of stock item at any time.
- Responsible for the cleanliness of the bars and restaurants.
- Ensure Health and Safety requirements are understood and followed by the team members.
- Ensure company policies and procedures are always understood and adhered to by the team members.
- Ensure a high standards of customer service are observed at all times.
- Ensure lively and informative briefings are conducted with the team at the start of each shift.
- Train, develop and motivate the staff to achieve high levels of productivity.
- Ensure the team members are looking presentable with clean, ironed uniforms always and that team members are wearing name badges at all times.
- Ensure the weekly roster is made according the to the forecasted occupancy.
- Manage team members’ annual leave days throughout the year effectively and according to the level of hotel business.
- Carry out appraisals for the Food and Beverage Department.
- Ensure the succession plan is in place within the department and in used as a guidance for training and exposure.
- Ensure any faulty equipment or lightings are reported to the Maintenance department and to follow up.
- Able to operate Restaurants, Lounge/Bar and Banqueting equipment.
- Conduct Duty Management shift.
- Conduct any other reasonable duty as per Management instructions.
Education and Work Experience
- Bachelor’s Degree in Food Science, Catering and Hotel Management, or other relevant fields.
- Must have 5 years’ experience in food and beverage management with top ranking hotels.
- Working knowledge of various computer software programs (MS Office and restaurant management software)
- Membership of relevant professional bodies.

- Responsible for coordinating recruitment for the company through the management recruitment team. Supervise the process, interviews and senior hires when necessary. Be actively involved in recruitment and selection process. Preparing all necessary tools for this activity. In all, managing the entire process from start to finish.
- Ensure that all job descriptions are up to date and create new ones when necessary.
- Monitor and deal with performance or grievance issue in a legally complaint and professional way while remaining within ethical bounds.
- Responsible for reviewing staff salaries and consulting with other department heads for pay increase where necessary. Implementing these reviews and promotions where necessary.
- Support other departments and maintain succession plan for the respective departments.
- Payroll management, administration of staff benefits and perks and ensure it is accurate and done on time.
- Creating and implementing effective onboarding plans.
